Rosemary Roasted Almonds
These nuts are a huge hit around our home, and for good reason. They are incredibly simple to make, and a wonderful snack to have on hand for game day or any day. Packed with fresh rosemary, a sprinkle of sugar, and a balance of saltiness! Any time I make these I’m constantly asked for the recipe, so here you go!

This recipe comes as a inspiration from one of my favorite distilleries in Longmont, Colorado! They serve a mix of bar nuts alongside your drink and they are ADDICTING. The first time I had them I about lost it, I had to get the recipe asap. Low and behold, months later I was able to find a copy of the recipe online! Fate was in my hands. The first time I made them at home I was taken back to that day I fell in love.

Why these Rosemary Roasted Almonds are Worth Making…
- You don’t need fancy equipment — just a mixing bowl and a sheet pan.
- They are the perfect protein packed snack!
Ingredients
- ALMONDS – The stars of the show, I like to use the unsalted and un-roasted kind. These will be labeled raw at the grocery store. I like this brand from Costco!
- BROWN SUGAR – Adds the perfect amount of sweetness to the nuts to balance out the rosemary and salt.
- SALT – Brings out the flavor in the nuts, plus it pairs beautifully with the sugar.
- BUTTER– This helps the brown sugar, rosemary, and salt stick to the almonds.
- CAYENNE PEPPER – A hint of spice adds a nice kick to the nuts. If you like spice, add more!
- ROSEMARY – The co-star of the show, rosemary and nuts are the perfect pairing. Use fresh rosemary, I have not tried dried yet so I cannot say if that will work or not!
How to Make Rosemary Roasted Almonds
- Roast the almonds – Preheat the oven to 350 degrees F. On a baking sheet, roast the almonds for about 10-15 minutes, tossing every 5 minutes until golden in color.
- Prepare your ingredients – In a medium sized bowl combine the melted butter, brown sugar, salt, rosemary, and cayenne pepper. It should form almost a paste.
- Toss the almonds – While the almonds are still warm, pour them into the bowl with the remaining ingredients. Toss everything together until the almonds are coated evenly.
- Allow to cool – Allow these to cool down to room temperature. Enjoy!

- Preheat the oven to 350 degrees F. On a baking sheet, roast the almonds for about 10-15 minutes, tossing every 5 minutes until golden in color.
- In a medium sized bowl combine the brown sugar, salt, melted butter, cayenne pepper, and rosemary. It should form almost a paste when it is fully combined.
- While the almonds are still warm, pour them into the bowl with the remaining ingredients. Toss everything together until the almonds are coated evenly. This should take a few minutes, everything will stick as the almonds start to cool.
