Every spring I begin to count down the days until it officially is Palisade peach season. If you’ve never had one before, they’re truly remarkable in every single way. They are grown on Colorado’s Western Slope, in a little Hallmark town named Palisade. This place is dear to my heart, I spent my 30th birthday there, we recently went on our mini-moon to Palisade, and it’s truly a magical town hiding on the west side of the mountains next to Utah. Back to the peaches – I’m not exaggerating when I tell you how unbelievably juicy, incredibly sweet, and packed with flavor they are. They live up to every bit of the hype and if you ever have the chance to get your hands on one DO NOT pass it up!

Also side note, if you’re not local to Colorado, don’t worry still may be able to find them. For years I’ve seen them at Lunds & Byerly’s in the Minneapolis metro area during July and August, so keep an eye out at your local L&B.

This easy Palisade Peach puff pastry galette is one of my favorite ways to celebrate the summer peach season. Using store bought puff pastry keeps things SO simple while letting the sweet peaches be the stars of this treat. With just 5 ingredients you probably have on hand already, you get a buttery, flaky pastry wrapped around sweet, caramelized peaches that taste like a beautiful sunny summer day in every bite.

Helpful Tips & Tricks
- I like to cut my peaches around the “equator” instead of from top to bottom, this makes the pit so much easier to remove. With a gentle twist of the peaches it usually loosens the pit!
- Remove the puff pastry from the freezer/fridge ahead of time. You want the puff pastry workable and not stiff, but also not so warm it becomes mushy.
- Brush off any excess flour from the side you will add the peaches to. This will allow the puff pastry corners to stick better and not fall open when baking.

- Fresh peaches – Colorado Palisade Peaches are my go to, but any peach in season in your area will work lovely for this recipe.
- Puff pastry (homemade or store-bought) – delicious layers of flour and butter create this pastry, I love using store bought to make things simple!
- Melted butter – adds depth and helps create a sauce with the juice from the peaches, it’s like a natural glaze that is created between the two ingredients.
- Brown sugar – adds sweetness and texture to the galette. The brown sugar crystallizes and creates a delicious crunch that pairs with the softness of the peaches.
- Egg – for the egg wash, this helps the crust create that beautiful golden brown color we love
How to Make Easy Palisade Peach Puff Pastry Galette
- Preheat the oven to 350 degrees F.
- Remove the puff pastry from the fridge and allow the dough to warm up for about 5-10 minutes. Un-fold the puff pastry onto a piece of parchment paper and using a rolling pin, gently roll out until there are no longer creases from the folds. Brush off any excess flour from the dough.
- Wash & cut the peaches along the “equator” remove the pit, and slice each into 1/2” wedges. Place each wedge in the center of the puff pastry creating a circle pattern.
- Drizzle the melted butter over the peaches, and sprinkle over the brown sugar. Fold each dough side in, covering the peaches slightly. This doesn’t have to be perfect, the more rustic the better!
- In a small bowl, whisk the egg. Brush the outside pastry edges with the egg wash. Add more brown sugar to the crust if you’d like more crunch.
- Bake at 350 degrees F for 30-35 minutes, or until the crust becomes a golden brown color and the peaches are beginning to wrinkle. Enjoy warm or at room temp!
