When it comes to snacking, there are few pairings as perfect as chocolate and peanut butter in my opinion. And these Stuffed Dates with Peanut Butter & Chocolate are not only an amazing combo, but a guilt-free indulgence.
You may be asking, why dates? Dates are literally nature’s candy. They are packed with fiber to keep you full and satisfied. Along with natural sugars, (non of that refined junk) so you can enjoy these without feeling icky, and satisfying your sweet tooth at the same time.
Peanut butter needs no introduction, I mean who doesn’t love peanut butter? Stuffed inside a date adds a savoriness that balances out the sweetness of the date. The dark chocolate coating adds a luxurious touch of bitterness. I LOVE this dark chocolate for this recipe, I find it pairs perfectly with the sweetness of the date, and saltiness of the peanut butter.

Ingredients
- Medjool Dates – The size of these are perfect for stuffing with peanut butter.
- Peanut Butter – Natural peanut butter can be oily, however, other peanut butters have palm oil added to prevent separation. By using the most natural peanut butter, these bites are better for you due to simple ingredients.
- Dark Chocolate – I’d go for dark chocolate, 72% or higher here. It really balances out the sweetness of the dates and peanut butter. Check out some of my favorite chocolate brands here!
- Flaky Sea Salt – Definitely an optional ingredient, but I think it adds another dimension to the dates.

How to Make Stuffed Dates with Peanut Butter & Chocolate
- Prepare the dates – Remove the pit by either ripping the date open like a hot dog bun, or use a knife to make a small slit.
- Fill the dates – Add about ½ teaspoon – 1 teaspoon of peanut butter to the dates.
- Freeze– Chill the filled dates until solid, about 30 min – 1 hour.
- Melt the chocolate – While the dates are chilling, melt the chocolate. Add the chocolate chips to a microwave safe bowl, and microwave on increments of 15 seconds, stirring after each increment, until fully melted.
- Coat the dates – Line a dinner plate or sheet pan with parchment paper. Coat each date with the melted chocolate using a fork and place on the parchment lined sheet. Sprinkle with flaky sea salt while the chocolate is still wet, if desired.
- Chill – Place the dates back in the freezer for 30 minutes or until the chocolate is set!
