Roasted Red Pepper Hummus
This roasted red pepper hummus is too good! Packed with veggies, protein, and fiber. It is the perfect mid-day snack, or a delicious sandwich spread.

- 2 red bell pepper
- 1/3 cup olive oil
- 1 can garbanzo beans drained & rinsed
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1 tsp kosher salt
- 3 cloves garlic
- 1/4 cup lemon juice (about 1 & 1/2 lemons)
- 1/4 cup tahini
Turn on the oven to broil. Place the peppers on a baking sheet skin side up, and brush the peppers with olive oil. Broil the peppers in the oven for 5-8 minutes or until the skins start to blister. Remove and let cool for about 5 minutes. Once cool remove the blistered skins from the peppers.
In a food processor add the garbanzo beans, garlic, and lemon juice, Pulse until smooth. Next, add in the olive oil, spices and salt, blend again until smooth.
Slice the de-skinned red peppers and add to the food processor. Blending until smooth. Drizzle in extra olive oil if needed to smooth out the hummus to your liking. Serve with veggies, pretzels, or pita!
