These Trader Joe’s 5-ingredient buffalo chicken meatball bowls are the ultimate easy dinner. Everything cooks on one pan and gets served over rice with roasted broccoli and blue cheese dressing!
Preheat the oven to 400 degrees F. Place the sliced zuchinni and broccoli florets on a sheet pan and drizzle with olive oil. Sprinkle with salt, pepper, and garlic powder. About 1/2 tsp each. Toss until coated.
Place the veggies in the oven and bake for 10 minutes. After 10 minutes, remove from the oven, toss the veggies, and place the buffalo chicken meatballs on the pan. Place back into the oven for another 10 minutes.
Meanwhile, prepare your rice.
Assemble your bowl starting with rice, then the meatballs, and veggies. Drizzle with blue cheese or ranch dressing. Enjoy!
