Ingredients
1mediumsweet potatomashed and cooled
1/2cuppeanut butter
2cupold fashioned oats
Instructions
Prepare the sweet potato by peeling the skin and boiling in water. Cook about 15 minutes or until the potato is soft and can be pierced with a fork. Mash with a fork and set aside to cool.
Pre-heat the oven to 225 degrees F.
Place 1 + 1/2 cup of the oats into a blender and pulse until you get a flour-like consistency. Pour the blended oats, remaining 1/2 c. oats, sweet potato, and peanut butter into a bowl and mix until fully incorporated. If the dough feels sticky, incorporate in 1 Tbsp of additional oats to the mixture. It should be tacky but not overly sticky, the dough will be thick.
Sprinkle a small amount of flour on a flat surface, and roll the dough out evenly with a rolling pin. The dough should be about 1/4 inch thick. Use a cookie cutter or pastry wheel to cut the dough into the desires shapes or sizes.
Place onto a parchment lined baking sheet and bake for 60 minutes or until the edges of the cookies start to stiffen up, they turn golden, and dry. I make sure the middle of the treats are still a bit soft! Store in an airtight container for up to 7 days!
