Ingredients
1Tbspolive oil
1/2mediumyellow oniondiced
1carrotdiced
3garlic clovesminced
1lbground turkey
1 -15ozcan black beansdrained and rinsed
1 - 14.5ozcan diced tomatoes
1 & 1/2cupschicken broth(low or no sodium)
2Tbsptomato paste
1Tbspcumin
1Tbspchili powder
1/2tspsmoked paprika
1/4tspdried oregano
1/4tspground cinnamon
1Tbspsalt
1tspground pepper
Instructions
In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and carrots and sauté 2 minutes. Add in the garlic and ground turkey, breaking up the turkey as it cooks. Cook the turkey until it is no longer pink and starting to brown.
Add in the black beans, diced tomatoes, chicken broth, tomato paste, ground cumin, chili powder, paprika, oregano, cinnamon, salt, and pepper. Mix well to combine.
Bring the mixture to a boil, then reduce heat to low. Simmer uncovered for 20 minutes, stirring occasionally.
Taste and adjust seasoning as needed, salt & pepper, etc. according to your preference.
Top with whatever you please! I like to use cotija, sour cream, sliced green onions, and cilantro.
Notes
Healthier tip: swap out the sour cream topping for Greek yogurt instead! Instant protein boost!
