Let me start by saying that if hummus is on the menu, I’ll be ordering it! Absolutely nothing beats a fresh, homemade batch of hummus! And making it at home is WAY easier than you think it could be. This could be a stretch, but I think this is the best roasted red pepper hummus I have ever had. I am obsessed with it, and I think you will be too!

Why hummus?
Hummus is such a fantastic snack to pair with veggies, pita, or even as a healthy sandwich spread! It is the perfect addition to a charcuterie board too, and can pair with quite almost anything! It is packed full of flavor, nutrients, and it’s good for you which is a win-win! The chickpeas are a awesome source of protein and fiber, plus you get a serving of vegetables with the red peppers. It really is a perfect healthier swap from those cream cheese/sour cream chip dips you find on the shelves. Serve this at your next football party gathering!
Ingredients
- Red bell pepper – it is called roasted red pepper hummus 🙂
- Garbanzo beans – these are packed with fiber to keep you feeling full
- Olive oil – this gives the hummus a creamy texture
- Paprika – I use smoked paprika, gives it a lovely flavor with a kick
- Cumin – just a pinch, adds a rich flavor
- Salt – salt adds balance to the hummus
- Garlic – the garlic adds so much flavor to this hummus
- Lemon juice – the perfect acid to balance out the sweetness of the peppers
- Tahini – adds a beautiful smoothness to the hummus, another main star of the recipe!
How to Make Roasted Red Pepper Hummus
- Roast the red peppers – turn the oven to broil, brush the peppers with olive oil and place in the oven for 5-8 minutes until the skins start to blister. Remove and let cool for about 5 minutes, or until the outer skin can be removed easily.
- Prepare the hummus – in a food processor, add the garbanzo beans, garlic, and lemon juice, Pulse until smooth. Next, add in the olive oil, spices and salt, blend again until smooth.
- Add the red peppers – slice the de-skinned red peppers and add to the food processor. Blend until smooth. Drizzle in extra olive oil if needed to smooth out the hummus. Serve with veggies, pretzels, or pita!
Roasted Red Pepper Hummus
Ingredients
- 2 red bell pepper
- 1/3 cup olive oil
- 1 can garbanzo beans drained & rinsed
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1 tsp kosher salt
- 3 cloves garlic
- 1/4 cup lemon juice (about 1 & 1/2 lemons)
- 1/4 cup tahini
Instructions
- Turn on the oven to broil. Place the peppers on a baking sheet skin side up, and brush the peppers with olive oil. Broil the peppers in the oven for 5-8 minutes or until the skins start to blister. Remove and let cool for about 5 minutes. Once cool remove the blistered skins from the peppers.
- In a food processor add the garbanzo beans, garlic, and lemon juice, Pulse until smooth. Next, add in the olive oil, spices and salt, blend again until smooth.
- Slice the de-skinned red peppers and add to the food processor. Blending until smooth. Drizzle in extra olive oil if needed to smooth out the hummus to your liking. Serve with veggies, pretzels, or pita!
