Pumpkin Bread

Why Pumpkin Bread?

As October arrives I have every urge to bake bread at least twice a week. Sweet breads like banana bread, dutch oven bread and of course this pumpkin bread recipe! You can’t go wrong with chilly nights and a slice of warm bread topped with butter.

This is what I call the best pumpkin bread you’ll find on the internet. It is so moist, flavorful, and packed with delicious pumpkin, cinnamon and cardamom. You cannot go wrong here!

The addition of cardamom to me makes this so special. It’s a spice that not many know about, in fact the first time I heard about it was when I worked at a local bakery in my early 20’s.

The pastry they served is called a “Swedish” ironically enough, cardamom is a spice that is used fairly often in their baking. The best way I can describe it is a cinnamon-y/nutmeg. It’s sweet yet has a kick of spice. But that’s what makes it so unique and special to this recipe!

Pumpkin Bread ingredients
Pumpkin Bread ingredients 2

Ingredients

  • White + brown sugar – a perfect balance between two types of sugar that adds sweetness to the bread.
  • Pumpkin puree – don’t get this one confused with pumpkin pie filling!
  • Butter – this adds the moist crumb that is oh so delish
  • Cinnamon– the perfect fall spice
  • Ginger – this adds a nice warmth to the bread
  • Nutmeg – one of the spices you find in pumpkin pie seasoning. This screams FALL!
  • Cardamom –  similar to cinnamon, but with a peppery-like flavor! Cardamom is a wonderful addition to this recipe.
  • Pumpkin seeds – what is pumpkin bread without pepitas?

How to Make Pumpkin Bread

  1. Prepare the pan – preheat the oven to 350 degrees F, and prepare a 9×5-inch loaf pan
  2. Combine ingredients – in a bowl. combine the white and brown sugar, pumpkin puree, and butter until smooth.
  3. Mix in the eggs and spices – add in the eggs, mix, next add in the spices, baking powder, baking soda, and salt. Mix until smooth.
  4. Fold in flour – gently fold in the flour and pour into the prepared pan. Sprinkle with pumpkin seeds and bake for about 60 minutes, or until a toothpick inserted comes out clean.

I’m a huge matcha girlie, so I opted for the Matcha Do About Nothing (gin) while my love decided on the Devil’s Advocate (mezcal) 🍸- also PS the DA drink comes with a little firework show, so if you come here be sure to order this!! ✨

It’s been a while, so thought I’d reintroduce It’s been a while, so thought I’d reintroduce myself!

My name is Ashley and The Hungry Cooke is my lil baby! (Next to my dog Tula of course 🐶)

I’m a huge foodie and have been since what seems like forever! I’m an avid traveler, typically finding my way around the globe for amazing food. My current reality is living in Colorado and enjoying the wonderful earth and exploring new restaurants and the local produce. 🗻

If we were to back track on where this all began, you would find the younger version of me watching hours of The Food Network binging anything I could learn. Then I’d go to the kitchen to apply my knowledge! Idk who allowed a 6 year old access to an oven but I was hooked.

From there forward I’ve just always had food in my blood. The kitchen is where I feel most creative in my life. Beautiful food presentation is my version of a Picasso painting! 🥐🎨

My purpose really is to inspire you to try cooking at home or trying a new place to eat in your neighborhood or city. You never know what you’re going to find!!

My biggest pieces of advice when it comes to food:

1. Always try everything once (even if it freaks you out), you may turn out to like it 😉

2. If there is a line out the door, or the restaurant is insanely busy, that’s a good sign.. to me it means the food is fabulous and worth the wait.

3. Cooking is creative, yes you can follow a recipe, but even more fun is that you can use it as a guide. For inspiration! Nothing has to be perfect when it comes to food, so experiment and have fun doing so!

4. Just do it. (Thanks Nike) no but truly, just try to make something new, try a new recipe, apply yourself to nourishing yourself through homemade food at home. If you try, you may just surprise yourself.

5. Stay Hungry - Self improvement is wonderful, continue to chase your dreams with cooking, your health and wellness, your bucket list, or even if it’s just drinking 1 less cup of coffee that day. Work hard in life and you’ll make all (or most) of your dreams come true. ✨

Stay hungry my friends 👩🏻‍🍳

Saturday morning grocery run featuring @traderjoes Saturday morning grocery run featuring @traderjoes and @costco 🛒🥑🍩🍓🍌🧀🍞

Putting together a meal plan for the week and your final list on Saturday morning is my best advice for success during the week. Knowing what to make is already taken care of, and the ingredients are all in the fridge. Makes the day seem a little less busy when you have one less decision to think of!

Let me know what you’re favorite @traderjoes item is in the comments below ⬇️ I’m always looking for new things to try!

I absolutely love that @marthastewart has turned i I absolutely love that @marthastewart has turned into such a talk again on social. A wise woman who brought so much inspiration to the world and to myself included. 🌺🌻

I had the lucky opportunity to meet Martha when I was just a young girl!! I think that’s where my obsession with all things cooking, baking, decorating, and homemaking came into play. 👩🏻‍🍳

I’m so joyful to see other woman prizing MS as a role model with taking care of your home, partner, and well being. Just dropping by to say it’s okay to do all these things, baking bread at home for your family, making dinner each night to feed your loved ones and keep them healthy, and making a delicious plate of brownies to enjoy after dinner.

Sometimes the media portrays homemaking as bad, but I’m here to share that it’s not. You do you, enjoy what you create within your home and celebrate each magical creation! 🫶🏻

❤️ have a wonderful Thursday my friends
