When October rolls around, I have the urge to cook and bake all things spooky related. Ingredients
- ORANGE BELL PEPPERS – Look for medium sized peppers that can stand up on their bottom without falling over.
- GROUND TURKEY – A high protein and low fat option.
- GREEN ONIONS – Use both the white and green parts of the onion for maximum flavor.
- DICED TOMATOES – Aim for the low or no salt added variety, that way you can control the amount of salt in the dish.
- ORZO PASTA – Basically a rice shaped pasta! These are great for this dish because they add just enough of that chewiness from pasta without being overpowering. You can find these at any grocery store usually in the pasta aisle!
- SPINACH – Fresh spinach works best, I have not tested this with frozen.
- FETA CHEESE – The cherry on top of the dish! A sprinkle of feta cheese adds the perfect saltiness and texture to the stuffed peppers and compliments the turkey nicely.
How to Make Jack-O-Lantern Stuffed Peppers
- Prepare the peppers – Cut the tops off the peppers and using a small knife, cut a face into the side of the peppers. Cook the peppers in boiling water for 3 min and drain.
- Cook turkey/stuffing – In a skillet cook the turkey with olive oil and green onion. Add in the tomatoes, spinach, orzo, oregano, salt and pepper. Simmer until the orzo is cooked.
- Stuff the peppers – Place the par-cooked peppers in a prepared baking dish and spoon enough filling into each pepper so it’s slightly above the rim of the pepper. Bake at 350 degrees F for 20 minutes.
- Finish with feta cheese – Sprinkle the feta cheese on top of the peppers, and broil for 2 minutes or until the cheese has softened. Enjoy!
