The obsession I have with these healthier peanut butter energy bites might not be the healthiest thing in the world, but there are worse things to be obsessed with!
It’s kinda crazy how some recipes come to be, for example the one that follows this blog post. Sometimes you make something and it’s embarrassing, but then every so often you create something extra special. That is what I would call these Peanut Butter Energy Bites. Very special.
They came to fruition one evening when my fiance informed me he was going hiking the next day. Of course the first thing that comes to my mind is, “if he’s going hiking this man needs a carb packed snack to keep his energy high to make sure he survives. LOL. I wasn’t wrong, turns out him and his friend did need a pick me up and these struck the right chord. The next day he went on and on about how much he and his friend loved these energy bites and these were special. Not sure if that was the high altitude and lack of oxygen talking, but I’ll take it as a win!
So here we are, weeks later and I officially think these need to be shared with the world. Not only because my fiance approved of them, but because they’re fabulous. A protein packed snack full of fiber, carbs, and sugar as a quick pick me up. Plus, they don’t have flour or butter. That’s even better in my book! Why these Healthier Peanut Butter Energy Bites are Worth Making…
- You don’t need fancy equipment — just a mixing bowl and a sheet pan.

Ingredients
- PEANUT BUTTER – The main flavor of these energy bites. I’ve used both natural peanut butter and regular, and I prefer the natural. But use whatever you have on hand. This brand works great!
- HONEY – Adds the perfect addition of sweetness and pairs great with peanut butter.
- BROWN SUGAR – Adds color to the energy bites, and sweetness!
- OLD FASHIONED OATS – These create a really great texture to the bites, and are a great source of fiber!
- SALT – Salt enhances the flavors of all the ingredients.
- BAKING SODA – This helps the bites puff up and create a soft texture!
- VANILLA – Vanilla is a great component, it adds a hint of warmth to these bites.
- EGG – This binds all the ingredients together to form the perfect energy bite.
How to Make Healthier Peanut Butter Energy Bites (No Flour & No Butter)
- Preheat the oven to 350℉. Mix together the peanut butter, honey, and brown sugar until combined. Add in the oats, salt, baking soda, and stir well. In a separate bowl beat the egg and vanilla, and add it to the mixture. Gently fold in the mini M&M’s.
- Form the balls and place onto a parchment lined cookie sheet, press down slightly, bake for 8 minutes.
- Remove when the tops start to golden/brown, they will finish cooking as they cool. These are great out of the oven, but even better the next day as the oats soften.

Healthier Peanut Butter Energy Bites (No Flour & No Butter)

- Preheat the oven to 350℉. In a medium sized bowl mix together the peanut butter, honey, and brown sugar until combined.
- Add in the oats, salt, baking soda, and stir well. In a separate bowl beat the egg and vanilla, and add it to the mixture. Gently fold in the mini M&M's.
- Form into 8 balls and place onto a parchment lined baking sheet, press down slightly, and bake for 8 minutes.
- Remove when the tops start to golden/brown, they will finish cooking and set as they cool. These are great out of the oven, but even better the next day as the oats soften!
Notes
- More protein: add 1–2 Tbsp protein powder or swap some of the peanut butter for powdered peanut butter
- Lower sugar: reduce M&M’s to 2 Tbsp (saves about 60 calories total)
