A Summer Weekend in Palisade, Colorado

OMG! I turned 30 this past Saturday and spent the weekend celebrating in Palisade Colorado! I’m so excited to share with you how to spend a summer weekend in Palisade, Colorado.

Palisade is Colorado’s version of “Wine Country” and is where a majority of the Colorado peaches grow. A small town located on the western slope of the Rocky Mountains near Utah. Just about a 4 hour drive straight through the mountains from Denver. Due to the drive, it’s definitely more of a long weekend getaway rather than a day trip. Stay the extra couple nights to really have the full experience in this beautiful town!

Bread and Melted Brie Palisade

Palisade has so much to offer, countless wineries, amazing restaurants, lavender farms, and peach orchards for miles. When I discovered there was a wine biking tour, I knew I had to visit and partake in this experience. I’m so excited to share with you a detailed guide of Palisade and places to stay, eat, and drink!

Where to Drink Wine in Palisade, Colorado

Blue Beryl – a mother + daughter owned winery located on the west side of Palisade, specializing in dry wines. They have a beautiful tasting room and covered patio for relaxing. 

Maison La Belle Vie – an elegant winery serving bistro bites, wine flights, slushy flights, and more. The food is outstanding here! 

Carboy Winery – a beautiful winery overlooking Mount Garfield + Book Cliff Mountains. They also offer a yoga class on their patio on Sunday morning at 11am for $10! 

Vines 79 – a very quaint Wild West themed winery specializing in reds. In the summer they serve a delicious peach sangria! I loved this winery the most, it is very homey feeling and a peaceful environment. Plus, the owners story is so touching. A woman living out her dreams through perseverance through Covid + succeeding. 

Bookcliff Vineyards – this beautiful winery is situated atop of a hill with a huge covered patio overlooking the valley. They offer some charcuterie snacks, and the flight comes with crusty breadsticks + homemade jam. 

Where to Stay in Palisade, Colorado

Spoke and Vine Motel – this is where we stayed! A beautiful recently updated motel offering breakfast in bed, on site bar/coffee shop, and outdoor fenced in patio area so your pup doesn’t run away! We will certainly be staying here again on our return. The location is the best part, walkable/bike-able to downtown main street and the endless wineries. 

Wine Country Inn – a more upscale option, located adjacent to 21 acres of vineyard. A very authentic wine country experience. 

Vine House (Airbnb) – a tiny house with 2 beds/1 bath located just east of the downtown area. Incredibly cute vibes + location is great for the wineries on the east side of town. 

The Sweet Peach Studio Apartment (VRBO) – located adjacent to the Colorado river, a great location off the main road, but will need a car/bike to visit wineries. Not super conveniently located.

Where to Eat in Palisade, Colorado

Pêche – (pronounced pesh) an incredible restaurant ran by an ex-Michelin star chef. This was our second time visiting and I am not exaggerating when I say it is the best meal I’ve ever enjoyed. Service is incredible, and the food is outstanding. (Pictured above!)

Palisade Brewing Company – a brewery with fantastic patio space serving craft beers + sandwiches/gyros and live music outside! 

Peach Street Distillers – a relaxed atmosphere distillery, offering snacks and an array of cocktails.

Slice O’ Life Bakery – the local bakery downtown, offering pastries, breads, pies, espresso + more!

Fidel’s Cocina and Bar – a vibrant taqueria located downtown Palisade, offering margaritas and Latin inspired dishes!

Clark & Co’s Distilling – a distillery/restaurant opened by the 7th generation of peach farmers. Known best by their grandfathers peach brandy in “moonshine style”, this is a unique place to check out in town. Offers incredible views. 

13 Brix Cider Bistro – a great place to grab lunch fare, if you’re craving a salad, sandwich, or soup! They also serve their cider by glass or a bottle!

Things to Do in Palisade, Colorado

Farmers Market (Sunday) – this market is incredible! 3 streets lined with vendors, mostly produce but a few homemade products as well. Definitely worth checking out before you leave town! 

Colorado National Monument – A quick 30 minute drive from downtown Palisade, located in Grand Junction. A beautiful park with Grand Canyon vibes. It is about a 23 mile drive through the park, with hikes located all around. We had Tula so we couldn’t hike “Paws on Pavement” is what they call it, so we drove and enjoyed the views! You may even spot a mountain goat! 

U Pick Tour peaches – Palisade Peach Shack offers daily u-pick tours of their peach farms on a tractor! 

U Pick Tour lavender @ Sage Creations – pick your own lavender bunch at the local farms around Palisade!

Palisade is truly one of my favorite places in Colorado to run off to when I feel disconnected from life. The small town vibe focused on agriculture is grounding as ever. I hope that this inspires you to find a new vacation spot that centers you. Whether it be locally, or out west past the Rocky Mountains and onto the Western Slope!

Beautiful dinner at the outstanding @steakhouse316 Beautiful dinner at the outstanding @steakhouse316.boulder last night! Delightful evening with my love celebrating 2 years. 🤍

I had a FABBBBULOUS 8oz filet minion and he had the Kings Cut Ribeye. We also shared the Boursin spinach and brussel sprouts. Everything was perfection. Loved the crust on the steaks and the filet was literally melt in your mouth perfection! 

I’m a huge matcha girlie, so I opted for the Matcha Do About Nothing (gin) while my love decided on the Devil’s Advocate (mezcal) 🍸- also PS the DA drink comes with a little firework show, so if you come here be sure to order this!! ✨

Thanks again for a wonderful meal, we will certainly be back!

It’s been a while, so thought I’d reintroduce It’s been a while, so thought I’d reintroduce myself! 

My name is Ashley and The Hungry Cooke is my lil baby! (Next to my dog Tula of course 🐶) 

I’m a huge foodie and have been since what seems like forever! I’m an avid traveler, typically finding my way around the globe for amazing food. My current reality is living in Colorado and enjoying the wonderful earth and exploring new restaurants and the local produce. 🗻

If we were to back track on where this all began, you would find the younger version of me watching hours of The Food Network binging anything I could learn. Then I’d go to the kitchen to apply my knowledge! Idk who allowed a 6 year old access to an oven but I was hooked. 

From there forward I’ve just always had food in my blood. The kitchen is where I feel most creative in my life. Beautiful food presentation is my version of a Picasso painting! 🥐🎨

My purpose really is to inspire you to try cooking at home or trying a new place to eat in your neighborhood or city. You never know what you’re going to find!! 

My biggest pieces of advice when it comes to food:

1. Always try everything once (even if it freaks you out), you may turn out to like it 😉

2. If there is a line out the door, or the restaurant is insanely busy, that’s a good sign.. to me it means the food is fabulous and worth the wait.

3. Cooking is creative, yes you can follow a recipe, but even more fun is that you can use it as a guide. For inspiration! Nothing has to be perfect when it comes to food, so experiment and have fun doing so! 

4. Just do it. (Thanks Nike) no but truly, just try to make something new, try a new recipe, apply yourself to nourishing yourself through homemade food at home. If you try, you may just surprise yourself. 

5. Stay Hungry - Self improvement is wonderful, continue to chase your dreams with cooking, your health and wellness, your bucket list, or even if it’s just drinking 1 less cup of coffee that day. Work hard in life and you’ll make all (or most) of your dreams come true. ✨

Putting together a meal plan for the week and your final list on Saturday morning is my best advice for success during the week. Knowing what to make is already taken care of, and the ingredients are all in the fridge. Makes the day seem a little less busy when you have one less decision to think of!

I had the lucky opportunity to meet Martha when I was just a young girl!! I think that’s where my obsession with all things cooking, baking, decorating, and homemaking came into play. 👩🏻‍🍳

I’m so joyful to see other woman prizing MS as a role model with taking care of your home, partner, and well being. Just dropping by to say it’s okay to do all these things, baking bread at home for your family, making dinner each night to feed your loved ones and keep them healthy, and making a delicious plate of brownies to enjoy after dinner. 

Sometimes the media portrays homemaking as bad, but I’m here to share that it’s not. You do you, enjoy what you create within your home and celebrate each magical creation! 🫶🏻

I think I may have found the best taco spot in Lon I think I may have found the best taco spot in Longmont, CO! 🌮

Summit Tacos is located just off the downtown main street area. A quaint order at the counter restaurant preparing delicious plates in an old renovated house! Plus, it’s #dogfriendly 🐶

It is reasonably priced and totally worth a visit! I cannot wait to go back. Now for what we ate: 

🌮🥣 Pambazo - Spicy grilled sandwich dunked in our guajillo salsa, with chorizo, potatoes, crema, cotija cheese and a side of Pozole

✨this meal is my new obsession, I really wanted the Pozole which is why I ordered this. Much to my surprise I ended up falling in love with the sandwich stuffed with chorizo and the soup. SO GOOD 

🌮 Cochinita | Barbacoa | Carnitas | Chorizo 

✨ The chorizo was the winner of the taco quad plate! Loved that you can pick and choose what you want. 

Also almost forgot to mention, @summit_tacos serves beverages including soda, beer, and margaritas 🍺 they also have daily specials including a fabulous happy hour!

This Healthy Granola recipe is on my list of new f This Healthy Granola recipe is on my list of new favorite things to make! Perfect for a post-workout snack paired with some oat milk, or with yogurt in the morning. 

Nothing but good wholesome ingredients in this one, yet packed with flavor and crunch! 🥣🥥🍯

HEALTHY GRANOLA 🧡

1 + 1/2 c. old fashioned oats
1/2 c. shredded coconut (unsweetened)
1/4 c. pumpkin seeds
1/4 c. golden raisins 
1 tsp ginger 
1 tsp cinnamon 
1/4 tsp kosher salt
2 Tbsp + 1 tsp coconut oil 
2 Tbsp honey 
2 Tbsp molasses 

- In a medium bowl combine the oats, coconut, pumpkin seeds, raisins, ginger, cinnamon, and salt. 

- Melt the coconut oil in a bowl, and add in the honey and molasses. Mix until combined.

- Pour the coconut oil mixture into the oat mixture. Mix until combined. Pour onto a parchment lined baking sheet + bake for 40 minutes at 275 degrees. Stir the granola every 20 minutes. Allow to cool for 10 minutes!
