- CARROT & CELERY – Add another level of flavor, sweetness, and a nice texture to each bite.
- LEFTOVER TURKEY – Thanksgiving leftovers work perfectly for this soup, but if you make this at a different point during the year ground turkey works great as well.
- CHICKEN BROTHER – I prefer the low sodium variety, but use what you have. Bone broth is also a really nice alternative for added protein.
- Cream cheese – This adds a nice richness to the soup without being overly creamy.
- Spinach – This adds a pop of color, additional protein, and another nutritious vegetable!
How to Make Leftover Turkey Sweet Potato Soup
- Cook the veggies – Melt the butter in a dutch oven over medium heat, add in the sweet potato, onion, carrot, and celery. Sauté about 3 minutes. Add in garlic and cook until fragrant, about 1 minute.
- Mix in broth and simmer – Pour in the broth, Italian seasoning, basil, salt, pepper, red pepper flakes, and bay leaf. Add in shredded turkey. Simmer for 5 minutes until soup is warmed through.
- Finish off the soup – Add in the cream cheese and stir until melted. Lastly, add in the spinach and mix until incorporated. Enjoy!

Leftover Turkey Sweet Potato Soup
This simple turkey sweet potato soup is a fall favorite! Packed with fresh veggies, turkey, and a touch of cream cheese for a complete meal in a bowl.

- In a large stock pot, melt butter over medium-low heat. Add in sweet potato, onion, carrot, and celery, sauté veggies until onions start to turn translucent, about 3 minutes. Add the garlic and sauté for an additional minute until fragrant.
- Pour in the broth along with the Italian seasoning, basil, salt, pepper, red pepper flakes, and bay leaf. Add in shredded turkey. Bring soup to a boil, reduce heat and simmer for 5 minutes. Mix in the cream cheese until smooth and add in the fresh spinach.
- Top with fresh parmesan cheese & enjoy!
Notes
You can make this any time of the year, just sub out the leftover turkey for 1/2 lb of ground turkey! After sautéing the veggies, remove from the pan, cook the turkey with 2 Tbsp olive oil, and add the veggies back in when meat is no longer pink. Continue to follow the recipe as follows. I have made this recipe both ways and either way this soup is incredible!
